Method
- Blend cottage cheese until completely smooth.
- Mix flour, baking powder, and salt in a bowl.
- Add blended cottage cheese, olive oil, Greek yogurt, and herbs to dry ingredients.
- Stir and lightly knead until a smooth dough forms.
- Divide dough into 6 portions and roll into balls.
- Roll each ball into a thin flatbread.
- Cook in a nonstick skillet over medium heat for 1–2 minutes per side until golden.
Notes
Keep cooked flatbreads covered with a towel to maintain softness.
