Ingredients
  

Dough
  • 1 cup cottage cheese full-fat
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 1 tbsp fresh herbs parsley or dill, optional

  • Mixing bowl

  • Nonstick skillet

Method
 

  1. Blend cottage cheese until completely smooth.
  2. Mix flour, baking powder, and salt in a bowl.
  3. Add blended cottage cheese, olive oil, Greek yogurt, and herbs to dry ingredients.
  4. Stir and lightly knead until a smooth dough forms.
  5. Divide dough into 6 portions and roll into balls.
  6. Roll each ball into a thin flatbread.
  7. Cook in a nonstick skillet over medium heat for 1–2 minutes per side until golden.

Notes

Keep cooked flatbreads covered with a towel to maintain softness.
