Ingredients
  

Pasta
  • 250 g penne pasta
White Sauce
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1.5 cups milk warm
  • 0.5 cup heavy cream
  • 0.75 cup parmesan cheese grated

Equipment

  • Large pot
  • Skillet or saucepan
  • Whisk

Method
 

  1. Cook penne in salted water until al dente. Reserve pasta water and drain.
  2. Melt butter and olive oil, sauté garlic briefly.
  3. Whisk in flour and cook 1 minute.
  4. Gradually add milk, whisking until thickened.
  5. Add cream, seasoning, and cheese.
  6. Toss pasta with sauce and serve hot.

Notes

Use warm milk and add cheese on low heat for smooth sauce.
