Ingredients
  

Marinade
  • 1 cup plain Greek yogurt
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground coriander
  • 0.5 tsp cayenne pepper adjust for spice
  • 1 tsp salt
  • 0.5 tsp black pepper
Chicken
  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • fresh cilantro or parsley for garnish, optional
  • lemon wedges for serving

Equipment

  • Mixing bowl
  • Grill or baking sheet

Method
 

  1. In a large mixing bowl, combine the Greek yogurt, minced garlic, olive oil, lemon juice, lemon zest, cumin, paprika, coriander, cayenne, salt, and black pepper. Whisk until smooth.
  2. Add the chicken pieces to the bowl, ensuring each is fully coated. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat grill to medium-high or oven to 425°F.
  4. Remove chicken from marinade, pat dry.
  5. Grill 6-8 minutes per side or bake 20-25 minutes until internal temperature is 165°F.
  6. Rest for 5 minutes, garnish, and serve.

Notes

Marinate overnight for best flavor. Adjust spices to taste.
