Ingredients
  

Cookie Dough
  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp instant coffee granules
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
Mix-Ins
  • 1 cup toffee bits
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup dark chocolate chopped, optional
  • flaky sea salt for topping

Method
 

  1. Brown the butter in a saucepan until golden and nutty, then cool slightly.
  2. Mix brown sugar, granulated sugar, and brown butter until smooth.
  3. Add eggs one at a time, then mix in vanilla and instant coffee.
  4. Whisk flour, baking soda, and salt separately, then combine with wet mixture.
  5. Fold in toffee bits and chocolate.
  6. Chill dough for at least 1 hour.
  7. Preheat oven to 350°F and line baking sheets with parchment.
  8. Scoop large dough portions and bake 11–13 minutes until edges are golden.
  9. Sprinkle with flaky sea salt and cool before serving.
