  • 1 sheet puff pastry thawed
  • 3 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 oz goat cheese softened
  • 1 tsp fresh thyme
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F (200°C) and line baking sheet with parchment.
  2. Cook onions with olive oil, butter, salt, and sugar for 30-35 minutes until caramelized.
  3. Cut puff pastry into 6 squares and score borders.
  4. Spread goat cheese inside border and top with onions.
  5. Brush edges with egg wash and sprinkle thyme.
  6. Bake 18-22 minutes until golden and puffed.

Notes

Drizzle with honey or balsamic glaze before serving for added flavor.
