- Preheat oven to 325°F. Spray muffin tin and place in larger dish.
- Blend eggs, cottage cheese, salt, pepper until smooth.
- Stir in cheese and variation-specific mix-ins.
- Pour into muffin cups.
- Add hot water to larger dish halfway up tin sides.
- Bake 25-30 minutes until set. Cool slightly before removing.
Notes
Store in fridge up to 5 days or freeze up to 3 months. Reheat in microwave 30-60 seconds. Use silicone tin for easiest release.
