Ingredients
  

Casserole Base
  • 3 cups cooked rice
  • 3 cups cooked shredded chicken
  • 8 oz cream cheese softened
  • 1 ranch seasoning packet
  • 1.5 cups shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 cup chicken broth
  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper
  • 0.5 tsp onion powder
  • 2 green onions sliced

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix cream cheese, ranch seasoning, broth, and spices until smooth.
  3. Stir in rice and chicken until coated.
  4. Fold in half the cheese and bacon.
  5. Transfer to baking dish and top with remaining cheese and bacon.
  6. Bake 25–30 minutes until hot and bubbly.
  7. Garnish with green onions and serve.

Notes

Best served fresh but reheats well with a splash of broth or milk.
