Method
- Line a baking sheet with parchment paper.
- In a bowl, mix Greek yogurt, sweetener, and vanilla until smooth.
- Gently fold in blueberries until coated.
- Scoop 1-2 tbsp clusters onto the sheet, spacing apart.
- Freeze 1-2 hours until solid.
- Optional: Melt chocolate with coconut oil, drizzle over clusters, and freeze 10-15 more minutes.
- Store in airtight container in freezer.
Notes
Use thick Greek yogurt for best shape. Pat blueberries dry to avoid ice crystals. Enjoy straight from freezer – no thawing needed.
