Zucchini Boats
  • 4 zucchini
  • 1 tbsp olive oil
  • to taste salt and pepper
Filling
  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
Topping
  • 1 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Preheat oven and prepare zucchini by slicing and scooping.
  2. Pre-bake zucchini for 10 minutes.
  3. Cook ground beef with onion and garlic.
  4. Add tomato sauce and seasoning, simmer.
  5. Fill zucchini with beef mixture and top with cheese.
  6. Bake until cheese is melted and bubbly.
