Ingredients
  

Vegetables
  • 3-4 medium carrots peeled, chunked
  • 3-4 medium parsnips peeled, chunked
  • 2 medium beets peeled, wedged
  • 1 large sweet potato cubed, optional
Seasonings & Glaze
  • 3 tbsp extra virgin olive oil
  • 3-4 tbsp honey divided
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary chopped
  • salt and black pepper to taste

Equipment

  • Large baking sheet
  • Mixing bowl
  • Parchment paper

Method
 

  1. Preheat oven to 425°F. Line baking sheet with parchment.
  2. Chop vegetables into similar sizes and toss with oil, herbs, salt, and pepper.
  3. Spread in single layer and roast 25-30 minutes, stirring halfway.
  4. Drizzle with 2-3 tbsp honey, toss, and roast 10-15 more minutes until caramelized.
  5. Drizzle remaining honey if desired, garnish, and serve warm.

Notes

Use similar-sized pieces for even cooking. Watch honey in final stage to prevent burning.
