Ingredients
  

Main
  • 3-4 lb corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 onion quartered
  • 3 cloves garlic smashed
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 6 potatoes halved
  • 4 carrots cut into chunks
  • 1 cabbage cut into wedges

Equipment

Method
 

  1. Add broth, onion, garlic, and spices to Instant Pot.
  2. Place brisket on trivet and add spice packet.
  3. Cook on high pressure 75–90 minutes.
  4. Natural release 15 minutes.
  5. Remove meat and cook vegetables separately.
  6. Slice meat and serve with vegetables.

Notes

Always slice against the grain for tender meat.
