Ingredients
  

Frittata Base
  • 4 cups cooked leftover spaghetti
  • 6 large eggs
  • 0.25 cup milk
  • 0.5 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 0.5 cup chopped spinach or mushrooms optional

  • Large mixing bowl
  • Oven-safe skillet
  • Whisk
  • Spatula

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk together eggs, milk, parmesan, seasoning, black pepper, and salt.
  3. Add leftover spaghetti and toss to coat evenly.
  4. Stir in mozzarella, parsley, and optional vegetables.
  5. Heat olive oil in an oven-safe skillet and cook garlic briefly.
  6. Pour in spaghetti mixture and cook on stovetop for 4–5 minutes.
  7. Transfer skillet to oven and bake 12–15 minutes until set.
  8. Rest for 5 minutes, garnish, slice, and serve.

Notes

Use pasta that is not too wet for the best texture. Great for meal prep and can be served warm or cold.
