- Preheat oven to 375°F (190°C).
- Whisk together eggs, milk, parmesan, seasoning, black pepper, and salt.
- Add leftover spaghetti and toss to coat evenly.
- Stir in mozzarella, parsley, and optional vegetables.
- Heat olive oil in an oven-safe skillet and cook garlic briefly.
- Pour in spaghetti mixture and cook on stovetop for 4–5 minutes.
- Transfer skillet to oven and bake 12–15 minutes until set.
- Rest for 5 minutes, garnish, slice, and serve.
Notes
Use pasta that is not too wet for the best texture. Great for meal prep and can be served warm or cold.
