  • 2 cups mashed sweet potatoes
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 eggs large
  • 0.5 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt

  • 1 pie crust 9-inch

Method
 

  1. Preheat oven to 400°F (200°C) and roast sweet potatoes until tender.
  2. Lower oven temperature to 350°F (175°C).
  3. Mash sweet potatoes until smooth.
  4. Mix mashed sweet potatoes with melted butter.
  5. Add sugars and eggs, beating until smooth.
  6. Stir in milk, vanilla, spices, and salt.
  7. Pour filling into prepared crust.
  8. Bake for 50–60 minutes until set.
  9. Cool completely before slicing and serving.

Notes

Roasting sweet potatoes enhances flavor and prevents watery filling.
