Ingredients
  

Salad
  • 2 cups mixed olives pitted
  • 0.5 cup pomegranate arils
  • 0.5 cup walnuts toasted and chopped
  • 0.25 red onion finely diced
  • 2 tbsp fresh parsley chopped
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice fresh
  • 1 garlic clove minced
  • 0.25 tsp black pepper

Method
 

  1. Slice olives and toast walnuts if needed.
  2. Whisk dressing ingredients together.
  3. Combine olives, pomegranate, walnuts, onion, and parsley.
