  • 1 tbsp olive oil
  • 1 lb Italian sausage
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 5 cups chicken broth
  • 1 cup ditalini pasta
  • 0.5 cup heavy cream
  • 1 cup spinach
  • 0.75 cup Parmesan cheese grated

Method
 

  1. Brown sausage in a large pot.
  2. Sauté vegetables and garlic.
  3. Add broth and bring to a boil.
  4. Cook pasta until tender.
  5. Stir in cream, spinach, and Parmesan.
  6. Serve hot with garnish.

Notes

Add broth when reheating as pasta absorbs liquid.
