Ingredients
  

Potatoes
  • 2 lbs baby potatoes
  • 2 tbsp olive oil
  • salt to taste
Roasted Garlic Butter
  • 1 garlic bulb
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Optional Garnish
  • 2 tbsp fresh parsley chopped
  • 0.25 cup parmesan cheese grated

Equipment

  • Large pot
  • Baking sheet
  • Garlic roaster or foil
  • Potato masher or glass

Method
 

  1. Preheat oven to 400°F (200°C). Cut top off garlic bulb, drizzle with olive oil, wrap in foil, and roast 35–40 minutes.
  2. Boil baby potatoes in salted water for 15–20 minutes until fork tender.
  3. Drain potatoes and place them on a parchment-lined baking sheet.
  4. Mash roasted garlic into softened butter with olive oil, salt, and pepper.
  5. Gently smash each potato using the bottom of a glass.
  6. Brush garlic butter over potatoes and drizzle lightly with olive oil.
  7. Roast 20–25 minutes until crispy and golden.
  8. Garnish with parsley and parmesan before serving.

Notes

Roasting the garlic first creates a sweeter, deeper flavor that makes the potatoes extra delicious.
