Ingredients
  

Soup Base
  • 1 lb Italian sausage casings removed
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups spinach fresh
Tortellini
  • 1 package cheese tortellini 9–12 oz, fresh or frozen
Garnish
  • 0.25 cup parmesan cheese
  • 2 tbsp parsley chopped

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Brown Italian sausage in a large pot, then set aside.
  2. Sauté onion, carrots, and celery until softened, then add garlic.
  3. Return sausage to the pot, add chicken broth, Italian seasoning, salt, and pepper; simmer.
  4. Add tortellini and cook until tender.
  5. Stir in fresh spinach and cook until wilted.
  6. Garnish with parmesan and parsley before serving.
