Slow Cooker Cajun Chicken Alfredo

Ingredients
  

Chicken & Seasoning
  • 2 lbs chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
Sauce & Pasta
  • 2 cups chicken broth
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup parmesan cheese grated
  • 2 tbsp butter
  • 12 oz fettuccine pasta cooked separately
  • 0.5 tsp red pepper flakes optional

Equipment

  • Slow cooker
  • Large pot
  • Mixing spoon
  • Forks for shredding chicken

Method
 

  1. Season chicken and place in slow cooker with broth, onion, and garlic.
  2. Cook on LOW 6–7 hours or HIGH 3–4 hours until tender.
  3. Shred chicken and return to slow cooker.
  4. Stir in cream, butter, and parmesan until smooth.
  5. Cook briefly until sauce thickens.
  6. Add cooked pasta and toss to coat.
  7. Serve hot with parsley and extra parmesan.

Notes

Cook pasta separately to avoid mushy texture. Add extra cream when reheating if needed.
