Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together almond flour, erythritol, baking powder, and salt.
- In another bowl, cream together butter and cream cheese until smooth and fluffy.
- Add egg and vanilla extract to the butter mixture and mix well.
- Gradually fold in the dry ingredients until a smooth dough forms.
- Scoop dough onto the baking sheet and flatten slightly.
- Bake 12–14 minutes until edges are lightly golden. Allow to cool on the sheet for 10 minutes, then transfer to a wire rack.
Notes
Optional: fold in sugar-free chocolate chips or nuts.
