Ingredients
  

Dry Ingredients
  • 1 cup almond flour finely ground
  • 0.25 cup erythritol
  • 0.5 tsp baking powder
  • Pinch salt
Wet Ingredients
  • 4 tbsp unsalted butter softened
  • 4 oz cream cheese softened
  • 1 egg large
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, erythritol, baking powder, and salt.
  3. In another bowl, cream together butter and cream cheese until smooth and fluffy.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Gradually fold in the dry ingredients until a smooth dough forms.
  6. Scoop dough onto the baking sheet and flatten slightly.
  7. Bake 12–14 minutes until edges are lightly golden. Allow to cool on the sheet for 10 minutes, then transfer to a wire rack.

Notes

Optional: fold in sugar-free chocolate chips or nuts.
